Breakfast Casserole (Carolyn)

4 or 5 slices Sourdough Bread, crust trimmed off
2 cups Shredded Cheddar Cheese
1 lb. Link Sausage
4 large Eggs
¾ tsp. Dry Mustard
2 ¼ cups Milk
1 can Cream of Mushroom Soup, diluted w/ ½ can Milk
¼ cup Shredded Cheddar Cheese

Place bread in a buttered 9” x 13” pan.  Sprinkle with the 2 cups of cheese.
Brown sausage & drain.  Cut sausage in small pieces – place on cheese.
Beat together eggs, mustard & milk (2 ¼ c).
Pour over other ingredients.  Refrigerate overnight.
Before baking, pour diluted mushroom soup over all. 
Sprinkle ¼ cup cheese on top.
Bake 325 for 1 hour.

Note:  It always takes longer than an hour – I allow 1 ½ hours.
