Broccoli Casserole (Casey)

16-24 oz. frozen chopped broccoli
1 egg
Dash of salt
Dash of pepper
Cream of mushroom soup
1-1/2 cups of shredded cheddar cheese
1-1/2 Tbl. lemon juice
1/4 cup of mayonnaise
Ritz crackers

1 pkg of frozen chopped broccoli - cover it with water and boil about 5 mins.

1 beaten egg then drain the broccoli and mix in egg and dash of salt and pepper. Pour the broccoli mix into the baking pan.

In a bowl, mix a can of cream of mushroom soup, about 1/2 cup of cheddar cheese, 1.5 tablespoons of lemon juice, and 1/4 cup of mayo.

Mix it all up then just layer it on top of the broccoli.

Next, take enough crushed Ritz crackers to layer on top of the mix. Then just sprinkle about another cup of cheese on top of that.  Bake at 400 for like 20 - 25 mins.
