Chicken-Fried Chicken

Chicken tenders or boneless breast
1 envelope of saltine crackers
1 cup flour
1 tsp baking powder
salt & pepper
red pepper (optional)
2 eggs
1 cup milk

Crush crackers fine. Mix in flour & seasonings.

Beat eggs & milk together.

Pound chicken flat then dip in cracker mix, then in milk mixture, then in cracker mixture again.

Fry in 2 or 3 inches of oil.
