Cold Start Fried Chicken (Lori) 1 chicken, about 3 1/2 pounds, cut in pieces Pour buttermilk over the chicken, making sure all sides are evenly coated. Pour oil into large skillet. Place the chicken skin side down in a single layer in the oil. Cover with lid. Cook on medium heat for 15 min. Remove lid. Turn chicken over and fry for another 8-9 min. Drain on paper towels.
