Key West Lime Pie (Carolyn)

1 baked 9 inch pie shell
½ cup cornstarch
1 ½ cups sugar
¼ teaspoon salt
1 ½ cups water
3 egg yolks, beaten
¼ cup fresh lime juice, or key lime juice
1 tablespoon grated lime rind
Meringue made with 3 egg whites

Combine cornstarch, sugar, and salt in a saucepan; gradually add water, stirring until smooth.  Bring to a boil over medium heat, stirring constantly, and boil 1 minute.  Remove from heat and quickly add half of the mixture to the egg yolks, mixing well.  Return this to the hot mixture, blending well.  Bring the mixture to a boil, stirring over medium heat.  Boil 1 minute longer.
Remove from the heat and add the lime juice.  Mix well.
Pour into cool pie shell.  Cover with meringue and bake at 350 degrees until golden.
