Overnight Blueberry French Toast (Jodi)

¼ c. butter, melted
12 slices of white bread
brown sugar
cinnamon
2 c. blueberries
1-1/2 c. milk
5 eggs
½  tsp. salt

Melt the butter. Brush butter on one side of 6 slices of bread and place in a 9 x 13 baking pan, butter side down.  Brush the other side of the same bread slices with butter. Sprinkle the bread slices with a little bit of cinnamon and brown sugar. (I use the back of a spoon to spread the brown sugar into the bread.) Add the blueberries on top of the bread slices. Brush butter on both sides of the remaining 6 slices of bread and place on top of the blueberries. Sprinkle the bread slices with a little bit of cinnamon and brown sugar.

Beat eggs, milk and salt. Pour over the bread, cover. Refrigerate overnight. The next morning, bake at 350 degrees for 40 – 45 minutes.


*Tips: Don't use a lot of brown sugar or it will be too sweet. This recipe actually stores well for several days in the refrigerator without getting soggy. I just take out the number of pieces I need and microwave them. Great for overnight guests.
