Tamale Pie (Carolyn)

1 LB. lean ground beef
1/3 cup chopped green pepper
1/3 cup chopped onion
1 clove garlic, minced
1 cup thick and chunky salsa(or 1 8 ounce can tomato sauce)
1 cup corn
1 envelope (1.25 ounces) taco spice and seasoning
1 box (8.5 ounces) corn bread mix
(Milk & Egg – according to direction on corn bread box)
½ cup shredded Cheddar cheese

Preheat oven to 375.  Cook ground beef, green pepper, onion and garlic until beef is browned and crumbly.  Drain off fat.  Stir in salsa, corn and taco seasoning.  Spoon into casserole.  Prepare corn bread according to package directions.  Spoon batter over ground beef mixture.  Bake 35-40 min. or until corn bread is done.  Sprinkle with cheese and bake an additional 1-2 min. or until cheese is melted.
