Yeast Donuts

3 pkg. Dry yeast
1 pt. Warm water
1 pt. Milk - scalded
1 c. sugar
1 c. lard
2 eggs
2 tsp. Salt
2 tsp. Vanilla

§ Put yeast in warm water with 1 tablespoon sugar. Scald milk, add lard & sugar. Cool to lukewarm. Beat eggs in large bowl. Add remaining ingredients. Add flour (I use Wondra Flour) to make soft dough. Knead well, then let rise until double in bulk.

§ Roll out to ½" thick & cut with donut cutter. Let rise until double again.

§ Fry in hot vegetable oil (350 degrees). Drain on paper towels on rack.

§ Roll in white sugar or glaze.

Glaze:
2 c. x-sugar
1/3 c. milk
1 tsp. Vanilla

This makes a large batch. They freeze well unsugared. Roll in sugar after you thaw them out.
